I don't know if it would work, but how about some sort of panel session where people bring along their curly infrastructure questions and the panel discusses possible solutions (with audience participation as usual)?  It's good to hear and see the presentations on new stuff, but I find it's also really useful to chat with people about issues and solutions with the current products that my team manages.  If I can cut down the fire fighting then there's more time to explore Windows Server 2008 :)
